1-1-2012 This entry of 11-1-2001 has been amended to change the spelling of "albumen" to "albumin" pursuant to the 10th Edition of the Nice Agreement. "Albumen" is the white of an egg used for culinary purposes. "Albumin" is a raw material in the nature of heat-coagulable, water-soluble proteins that occur in blood plasma or serum, muscle, the whites of eggs, milk, and other animal substances and in many plant tissues and fluids.
